Texas Chilli with Baby Shells... slowcooker version

Today was one of those days when I wanted something slow cooked and yummy. My Son has been taking Staggs Texas Chilli to school and to me it just looked not so good, I told him that this weekend I will make my version with some pasta. Let me tell you it smells and tastes so good. It was easy to put together and just simmered all morning and the last 20 minutes I added the shells to cook. This is what it looks like... all yummy goodness.




Here is the recipe

1 small roast of your choice, cut up in big chunks.
black pepper to season
1 large onion, cut up
5 cloves of garlic minced
1 can of whole tomatoes, I put them through the blender
1 can of tomato soup
2 cups of beef stock
2 packages of old Elpaso chilli mix
1 cup of baby shells.

-first of all plug your crockpot in and put it on high
-in a large frying pan brown your meat cubes adding some black pepper to season
-add them to your crockpot
-to the pan add your onions and fry for about 3 minutes
-add your tomato sauce, can of soup and beef stock
-add you 2 packages of chilli mix , blend everything together
-add your garlic and let cook for about 4 minutes, until everything is heated up.
-pour over beef that is in your crockpot
-place cover on crockpot and cook on high for 5 hours, stirring every 2 hours.
-taste the beef to check how soft you want your meat, add the pasta
-cook for about 20 minutes and there you go... all done and waiting for your family.

I love this , it was a easy meal and very tasty.
you can also freeze it in small potions for lunch time or simple dinners.

Chicken Parmigiana




>Breading
Italian Bread crumbs
Plain Bread crumbs
1/3 cup parmesan cheese
mix together in a bowl

>chicken
boneless chicken cutlets.. I just cut 2 chicken breats I can usually get 8 pieces of cutlets out of it.
sprinkle salt and pepper

>egg wash.. 2 eggs and a tiny bit of water mixed up in a seperate bowl

but chicken cutlet in the bread crumbs, then in the eggwash, and again in the bread crumbs.
on a Medium Heat stove with oil in a large skillet. add Chicken cutlets and fry on both sides till golden brown.

In casserole or small baking dish add some crushed tomato sauce.. the bottled stuff will do, you add 3 cloves of crushed garlic and some pepper,stir until blended. Put the cutlets on top of the sauce with mozzarella cheese on top.. bake in 350 oven for 15 minutes or until the sauce starts to bubble.

serve with pasta and veggies.

Simple and Delicious Breakfast..

I must say it is very rarely that I eat oatmeal cereal but since I am wanting something healthy and filling in the morning this was suggested to me by my Brother... not the prepackaged stuff.. this is the Quick oats and it is really quick only 5 minutes and it is done. all you need is Quaker Quick oats.. follow the directions and only add the touch of salt NO SUGAR!!.. then top with fresh berries and a tablespoon of pure maple syryp... OMG it is so yummy it almost feels like you are eating something sinful... but totally healthy!! I also fills me up and I have no desire to snack throughout the day. A Good Thing.. try it!
If you want to try something other than water, use apple juice instead and add some fresh apple chunks and cinnamon.

Something Different... and so yummy

We all make a wonderful pot roast and for me I always have lots of gravy left over, I put it in small batches and freeze it, for another recipe, or to eat with french fries. Today this is what I did with my leftover roastbeef gravy. My own Burger recipe, and then I add the gravy with some carrots. It is so delicious and something different and EASY!!!

Burgers with Gravy



1 pound of Regular Ground Beef... ( I know it's regular but for a great tasting and melt in your mouth burger it is the one to use... you do drain the fat anyways.)
1 tablespoon parsley flakes
2 tblsp ketchup
1 tblsp mustard... just your prepared mustard
1/2 tblsp wostershire sauce
1/4 cup plain breadcrumbs
1 egg
1 tsp season all
blend all ingredients together and form your patties
in frying pan place them inside and cook on both sides for about 5 minutes each side
drain fat off leaving just a little
add your gravy, salt and pepper to taste
add alittle water if too thick it will boil off
add your carrots if you want, it is also great with green peas
cover and cook on low heat for about 20 minutes, stiring on occasion.

This is so easy and a great way to use ground beef and that leftover gravy.
we had this with creamy mashed potatoes and some brocolli.

Cranberry White Chocolate Scones...



This is a recipe i got on Joy of Baking.com it is the best scone recipe I have ever tried. It is really easy and you can seperate the mixture and add different things to each seperated mixture which is what I do, because my son only likes chocolate chips in his. You can make one large one or individual ones about 10- 12 per batch. here is the recipe

preheat oven to 350

2 cups of all purpose flour
1/3 cup granulated white sugar
2 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/3 cup of cold unsalted butter..(i do little cubes)
1/2 cup dried cranberries
1/2 cup white chocolate chips
(optional if you want to seperate the dry mixture and add chocolate chips to half)
2/3 to 3/4 cup of milk

blend the flour, sugar, baking powder and salt together
add the cold butter
with your hands(clean) blend the flour and butter together i find my hands get the right texture and it is faster this way the butter does not melt. you are looking for a crumbly texture
add your cranberries and chocolate
slowly ad the milk stir in with a spoon or fork
you want a not so wet dough
scoop onto a parchment lined cookie sheet
bake for 18-20 minutes at 350

this is fast and a favourite for breakfast or snack before bed. Enjoy!!

Chicken and Dumpling Soup

Tonight this is what's for dinner, My son is under the weather so I thought I would make some soup. I didn't feel like noodles or rice in it and wanted my mom's dumplings. I was on the Bread and Honey and she made this and I just had to try it. I wanted something not thick so here is my version of the recipe.



6 cups of broth, I used chicken and vegetable combined.
1 onion chopped
4 cloves of minced garlic
handful of carrots chopped
1/2 cup of frozen corn
thyme
salt
1/4 cup of cream or half and half( this is what I used)
2 chicken breasts cut up in chunks
3 tbsps of butter

in a large pot add the butter, onions, and garlic, fry until the onions are soft.
add the broth, chicken and cut up vegetables.. cook for about 10. minutes. add cream.cook for another 6 minutes

Dumplings
2 cups of flour
1 tbsp of baking powder
salt
sugar just a pinch
water

in a large bowl add the flour, salt, baking powder, sugar, you can add some thyme if you like. Add water until you get a thick dough, take small spoonfulls and drop the dumplings in the soup . add the thyme, cover and cook for about 30 minutes of med-low heat.
I was amazed because I am not a soup maker at all but it was so very good. try it with some garlic toast on the side. yummy.

Really Easy Spagetti Sauce.

Tonight we had one our favourites.. Spagetti. This is my version of a little spicy sauce that is so easy and delicious. Many of my friends just love this and it is requested for many of our gettogethers. It is bound to surprize some of you with the easy ingredients.

Spagetti Sauce.. just a little spicy, the way my family loves it.



Spagetti Sauce

Ground beef ( any type will do because you will have to drain the fat off)
1 onion chopped
6 cloves of garlic minced
2 tbspoons of italian herbs
2 tbspoon of oregano ( dried of fresh)
1 pkg of beef bovril
salt to taste
1 Jar Classico Tomato and Basil( I usualy blend it up in a blender.. my husband doesn't like the chunks of tomato, but you can leave it)
3 tbspoons of Nupak Hot Sauce.. ( this is the spicy and you get such great flavour as well)( You can find this in any grocery store)
1/2 green pepper
2 bay leaves

Start by frying the onions with the italian herbs, oregano, beef bovril, hot sauce, fry for about 3 minutes, Add ground beef cook until the beef is browned.. drain off most of the fat. Add your sauce, minced garlic,2 bay leaves and green peppers. you might want to add some water as well so the sauce is not too thick about 1/4 cup most of it will boil off, cook for about 20 minutes on medium heat, taste to see if it need more salt. It is your desired taste if you want to add more. Cook for another 15 minutes on low heat.
Serve with your favourite noodles.. this is also my sauce for making Ziti, Lasagne.
